Summer: Al Fresco Dining

Dining alfresco can be a wonderfully laid-back affair. During the warm summer months, I like to take advantage of the great weather and head outdoors.

On a recent trip to Newport  I managed to persuade my hubby to have a picnic on the beach. The setting was perfect – sunshine, a view of the ocean and rocky peninsula and a gentle breeze. Lunch was served in a bamboo box (ok, I did not pack our own picnic, it was waiter service on the beach) which created a hard surface to eat off whilst protecting food from the elements when needed. This was definitely a step above my typical chicken salad sandwich wrapped in tin foil.

Mid-week I am busy with work and kid summer camp activities so if I am lucky enough to have a few hours with a friend I keep it simple. Brunch often works out well. On our porch I serve tea, croissants, butter and jam – delish!

Poolside dining requires minimum fuss.  A frittata is easy to make ahead of time and it can be eaten cold or heated up just before serving. I like the flavor combination of goat cheese, spring onions and red pepper.

Whether you are spreading out a blanket in your own backyard, at the beach or playground, dining alfresco can be a wonderfully relaxing summer treat. Take advantage of the great weather and have a picnic.
